Follow this simple recipe for an excellent Chicken Dijon

Chicken Dijon

Ingredients:

½ cup plain yogurt
2-3 tablespoons Dijon mustard
1-cup panko flakes
1-teaspoon thyme leaves
¼ teaspoon salt and pepper
4 skinless chicken breasts or legs (boned if desired)

Instructions:

In a small bowl combine yogurt, and mustard. In a shallow bowl mix panko flakes, thyme, salt and pepper
Spread yogurt and mustard mixture over chicken, then roll in panko flakes mixture
Place chicken on a lightly greased (spray Pam instead) baking sheet. Bake at 350 degrees Fahrenheit for 45-50 minutes for bone in chicken. 30 minutes for boneless, or until golden brown

Tips:

You can use Vanilla yogurt instead of Plain yogurt
Country Style Dijon tastes better
Spend the money for good quality panko flakes
While chicken is cooking spray once with Pam to make the panko flakes crispy
Use defrosted chicken instead of frozen
